Fish Chowder

Ingredients

  • 500 gms fish cut into 1 cm cubes
  • 20 gms butter
  • 150 gms onion, finely chopped
  • 250 gms potatoes, peeled and cubed
  • 2 tblsp flour
  • 300 mls milk
  • 30 gms shrimps
  • 1 crab sticks, sliced
  • 2-3 large mussels,chopped
  • juice of 1 lemon
  • 2 tblsp parsley, chopped
  • freshly ground pepper
  • pinch oreganum

Preparation

  1. Put fish in large saucepan and cover with 450 ml hot water. add 1 tsp of salt. Simmer 10 mins. Drain and keep liquid.
  2. Melt butter in another saucepan, add onion and potatoes. Stir on and off as they cook over low heat for 5 to 10 mins- do not allow to brown.
  3. Remove from heat and add flour. Stir well. Add milk gradually, stirring well. Heat to simmering. Add liquid from fish and continue cooking 10mins.
  4. Add fish and shellfish. Heat to simmer.
  5. Add lemon juice , parsley, fresh ground pepper, oreganum and more salt if necessary. Bring to boil briefly.
