Storing Fish

In order to savour the optimum flavour and freshness, we recommend that you use the fish within a day or two of delivery. To store, put the fish on a plate, cover loosely, and place in the coldest part of the refrigerator. However, if the fish is to be kept for three or at most four days, it is advisable to put the fish in a sealed plastic bag which is then placed in a dish containing a layer of ice and it is then covered by a second ice layer. Do not allow direct contact between the fish and the ice for any length of time and wash the fish fillets before using.

Cooking Suggestions

Fish can be used in a wide variety of ways - in soups, pies, pates, as an entree or a main dish; it can be marinated and eaten raw or it can be fried, poached, baked, steamed, grilled, casseroled, soused, cooked on a barbecue or in a microwave. It can be cooked with a wide variety of accompaniments such as mushrooms, tomatoes, onions, celery, oranges or lemon slices and juice, red and green peppers, garlic, herbs such as parsley, dill, fennel, mint, chives, and rosemary. All seafood is best cooked lightly and served simply. Fish changes from translucent to white when cooked. DO NOT OVERCOOK. For more info click here
