Smoked Mackerel and Chorizo Potatoes

Ingredients

chorizo, roughly chopped

onions, chopped

potatoes, cut into small cubes

cherry tomatoes, halved

smoked mackerel , skinned

handful
fresh parsley leaves, chopped
Preparation
- Fry
chorizo sausage on high heat for 2 mins in large non stick frying pan,
until most of the oil has been released. Remove with slotted spoon.
- Reduce
heat to medium and add the onions and potatoes to the pan. Coat in the
oil from the chorizo and cook for 12-15 mins, stirring occasionally or
until potatoes are tender and the onions soft.
- Stir in
the tomatoes and chorizo. Flake the mackerel fillets with a fork and add
then to the pan. Gently mix and cook for 2 mins until hot thru. Stir in
parsley and serve.
