Fish in Sweet and Sour Sauce

Ingredients

  • 675 gms fish fillet
  • 1 cup plain flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp baking powder
  • 1/2 cup water
  • sweet and sour sauce
  • 1 medium carrot
  • 1 small green pepper
  • 4 tblsp oil
  • 4 tblsp vinegar
  • 1 1/2 tblsp sugar
  • 1/2 tsp green ginger, chopped
  • 4 tblsp water
  • 1/2 tsp salt
  • 1 cup tomatoes, sliced and peeled
  • 1 tsp cornflour

Preparation

  1. Make sauce first.
  2. Cut carrot into very fine match like strips, dice green pepper and cook both in small amount of salted water for 5 mins. Drain thoroughly
  3. Put oil, vinegar, sugar, ginger, water, salt and tomatoes into a pan and heat, stirring constantly until boiling. Add carrot and green pepper and cook for a further 2 mins.
  4. Mix corn flour with a little cod water and stir into sauce. Simmer 1 min stirring all the time.
  5. Cut fish into bite sized pieces.
  6. Sift flour, salt, pepper and baking powder. Make a well in the centre , add water and beat until smooth.
  7. Coat fish with batter and fry in oil until golden brown. Drain well serve with reheated sauce.
