Fish in Sweet and Sour Sauce

tomatoes, sliced and peeled

Preparation
- Make sauce first.
- Cut
carrot into very fine match like strips, dice green pepper and cook both
in small amount of salted water for 5 mins. Drain thoroughly
- Put oil,
vinegar, sugar, ginger, water, salt and tomatoes into a pan and heat,
stirring constantly until boiling. Add carrot and green pepper and cook
for a further 2 mins.
- Mix corn flour with a little cod water and stir into sauce. Simmer 1 min stirring all the time.
- Cut fish into bite sized pieces.
- Sift flour, salt, pepper and baking powder. Make a well in the centre , add water and beat until smooth.
- Coat fish with batter and fry in oil until golden brown. Drain well serve with reheated sauce.
