- Clean any film from the calamari and cut into rings.
- Drop rings into rapidly boiling water. Reduce heat and simmer gently for 10- 15 minutes or until tender. Drain
- Mix 1/3 cup lemon juice with 1/3 cup oil. Add calamari and refrigerate overnight.
- Add 1 clove crushed garlic and 1 tbsp of chopped parsley. Stand for 2 a minimum of 2 hours
- Serve in the marinade
