Whitebait Fritters

Ingredients

• 200 gms whitebit
• 2 eggs
• 1 tsp salt
• 2 tsp fresh breadcrumbs

Preparation

1. Beat eggs well and mix in the other ingredients
2. Drop spoonful's of mixture into a pan with a thin layer of hot butter. Fry like pancakes
3. Serve hot with lemon juice squeezed over
