Calamari with Rice

onion, finely chopped

dry white wine

tomato paste

parsley, chopped

salt
and
pepper
Preparation
- Clean any film from calamari and cut into rings.
- Cook the cup of rice.
- Fry onion in oil till soft and clear. Add calamari and cook briefly, until flesh turns white. Drain off any excess oil.
- Add wine, tomato paste, Parsley and season to taste.
- Simmer for a few more minutes over a low heat. Stir in the rice and reheat. Garnish with lemon or tomatoes.
