Whitebait Omelette

  • 250-350 gms whitebait
  • 3 eggs
  • 1/2 tsp salt
  • 25 gms butter


  1. Beat eggs and salt with a fork until well mixed
  2. Melt butter in a frying pan and pour in egg mixture. Cook over moderate to low heat until omelette is half set.
  3. Spread whitebait over the top and continue cooking until nearly set.
  4. Remove from heat and stand a short time before rolling and slicing omelette.
  5. Serve with a crisp salad and french bread.
