Whitebait Omelette

Ingredients
- 250-350 gms whitebait
- 3 eggs
- 1/2 tsp salt
- 25 gms butter
Preparation
- Beat eggs and salt with a fork until well mixed
- Melt butter in a frying pan and pour in egg mixture. Cook over moderate to low heat until omelette is half set.
- Spread whitebait over the top and continue cooking until nearly set.
- Remove from heat and stand a short time before rolling and slicing omelette.
- Serve with a crisp salad and french bread.
