Ingredients

  • 100 gms brown rice
  • 1 onion , finely diced
  • 1 handful saltanas
  • splash olive oil
  • 1 knob butter
  • 2 fillets smoked mackerel ro similar smoked fish
  • 1 handful sunflower seeds
  • 2 hard boiled eggs- roughly chopped to add at end- optional

Preparation

  1. cook the rice ( approx. 25mins
  2. gently fry onions and the sultanas in the olive oil and butter
  3. break up the smoked mackerel
  4. when rice cooked fold together all the ingredients and sprinkle sunflower seeds on top
