Ingredients
- 100 gms brown rice
- 1 onion , finely diced
- 1 handful saltanas
- splash olive oil
- 1 knob butter
- 2 fillets smoked mackerel ro similar smoked fish
- 1 handful sunflower seeds
- 2 hard boiled eggs- roughly chopped to add at end- optional
Preparation
- cook the rice ( approx. 25mins
- gently fry onions and the sultanas in the olive oil and butter
- break up the smoked mackerel
- when rice cooked fold together all the ingredients and sprinkle sunflower seeds on top
