Pan fried fish with saffron and brie infused sauce

Ingredients

  • 4 fillets white fish
  • 1 to 2 gms saffron(powder or threads)
  • 20 mls white wine vinegar
  • 20 gms butter
  • 500 mls cream
  • 1 bay leaf
  • 3 - 4 pepper corns
  • 100 gms brie ( or could use smoked cheese)
  • 50 gms seasoned flour

Preparation

  1. Reduce vinegar, bay leaf and peppercorns by 2/3
  2. Add cream , brie and saffron and reduce further, till the sauce coats the back of a spoon, then strain
  3. Coat fish with flour and pan fry in a little oil.
