Pan fried fish with saffron and brie infused sauce

Ingredients
- 4 fillets white fish
- 1 to 2 gms saffron(powder or threads)
- 20 mls white wine vinegar
- 20 gms butter
- 500 mls cream
- 1 bay leaf
- 3 - 4 pepper corns
- 100 gms brie ( or could use smoked cheese)
- 50 gms seasoned flour
Preparation
- Reduce vinegar, bay leaf and peppercorns by 2/3
- Add cream , brie and saffron and reduce further, till the sauce coats the back of a spoon, then strain
- Coat fish with flour and pan fry in a little oil.
