Mussels in Tomato Sauce

Ingredients
- 30 mussels, shelled
- 2 tblsp oil
- 2 cloves garlic, chopped finely
- 1 onion, chopped finely
- 4 tomatoes, peeled and chopped
- 1 tblsp tomato paste
- 2 to 3 tblsp red wine
- 3 drops tabasco sauce
- salt and black pepper
- 1/3 cup parsley, chopped
Preparation
- Cook garlic and onions in oil until soft. Add tomatoes and tomato paste and cook gently for 10 mins.
- Add wine, tabasco sauce and seasoning. Mix - then add mussels and parsley.
- Continue cooking for a few mins until heated.
- Grated cheese may be sprinkled on top.
- Serve with rice or pasta.
