Mussels in Tomato Sauce

Ingredients

  • 30 mussels, shelled
  • 2 tblsp oil
  • 2 cloves garlic, chopped finely
  • 1 onion, chopped finely
  • 4 tomatoes, peeled and chopped
  • 1 tblsp tomato paste
  • 2 to 3 tblsp red wine
  • 3 drops tabasco sauce
  • salt and black pepper
  • 1/3 cup parsley, chopped

Preparation

  1. Cook garlic and onions in oil until soft. Add tomatoes and tomato paste and cook gently for 10 mins.
  2. Add wine, tabasco sauce and seasoning. Mix - then add mussels and parsley.
  3. Continue cooking for a few mins until heated.
  4. Grated cheese may be sprinkled on top.
  5. Serve with rice or pasta.
