Mussel, Kumera and Almond Salad

Ingredients

  • 24 cooked shelled mussels
  • 4 large kumara
  • 2 spring onions
  • 2 stalks celery
  • 1 cup slivered roasted almonds
  • 1 cup mayonnaise
  • 2 tblsp parsley , chopped
  • freshly ground black pepper

Preparation

  1. Peeled kumara and cut into large cubes. Boil in salt water until cooked. Strain immediately.
  2. Add spring onions, celery, pepper, almond, mayonnaise and mussels. Mix carefully and garnish with parsley
