Herb Topped Fish

Ingredients

  • 600 gms firm fish fillets
  • 1 tomato, chopped
  • 1/2 cup stale breadcrumbs
  • 75 gms fetta cheese- crumbed or cheddar grated
  • 1 clove garlic, crushed
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh coriander, chopped - or parsley
  • 1 tsp cumin, ground
  • salt and pepper

Preparation

  1. Arrange fish fillets on a lightly oiled oven tray.
  2. Combine all other ingredients for the topping in a bowl.
  3. Divide the topping over the fish and press lightly onto the fish.
  4. Cook in a moderate oven 190° C for about 10 minutes or until the fish is cooked through.
