Grilled Tarakihi with a ginger and lime dressing

Ingredients

  • 600 gm Tarakihi fillets or similar fish
  • 1 lime
  • 20 gm ginger
  • 1 carrot
  • 1 green courgette
  • 1 yellow courgette
  • 1 red bell pepper
  • 1 leek
  • 200 mls fish stock
  • 50 gms plain flour
  • 30 mls honey

Preparation

  1. Roll the fish fillets in flour, then brush with melted butter. Grill till golden brown on both sides.
  2. Slice carrots , courgettes etc into julienne(thin like match sticks but longer). Quickly stir fry the vegetables till soft.
  3. To prepare the sauce : reduce the fish stock by half then add fresh ginger, honey and lime juice, simmer for 2 minutes.
  4. To serve, divide the vegetables on to 4 warmed plates, place the fish on top, then spoon over the sauce.
