Grilled Tarakihi with a ginger and lime dressing

Ingredients
- 600 gm Tarakihi fillets or similar fish
- 1 lime
- 20 gm ginger
- 1 carrot
- 1 green courgette
- 1 yellow courgette
- 1 red bell pepper
- 1 leek
- 200 mls fish stock
- 50 gms plain flour
- 30 mls honey
Preparation
- Roll the fish fillets in flour, then brush with melted butter. Grill till golden brown on both sides.
- Slice carrots , courgettes etc into julienne(thin like match sticks but longer). Quickly stir fry the vegetables till soft.
- To prepare the sauce : reduce the fish stock by half then add fresh ginger, honey and lime juice, simmer for 2 minutes.
- To serve, divide the vegetables on to 4 warmed plates, place the fish on top, then spoon over the sauce.
