Fish Mornay

Ingredients

  • 500 gms white fish fillets, cubed
  • 4 tblsp butter
  • 1/2 cup bacon , chopped
  • 1/2 tsp salt
  • freshly ground black pepper
  • 4 tblsp flour
  • 1 1/2 cup milk
  • 1/2 cup asparagus pieces or cooked green beans
  • 1/2 cup cheese, grated
  • 1/4 cup dried bread crumbs

Preparation

  1. Melt butter and saute bacon in it. Mix in seasoning and flour. Cook until bubbling but do not brown.
  2. Gradually add milk, stirring well and cook for 2-3 min until thick.
  3. Add fish cubes, asparagus or beans and half the cheese. Thin if necessary with a little extra milk.
  4. Place in a greased dish and sprinkle with remaining cheese and breadcrumbs.
  5. Bake at 180° c for 20 minutes until fish is cooked and the topping brown.
