Fish Mornay

Ingredients
- 600 gms fish
- 1 tbsp white vinegar
- 25 gms butter
- 3 tbsp flour
- pinch cayenne pepper
- 3/4 cup milk
- 2 gherkins, sliced
- 1 tbsp lemon juice
- 1 tbsp mayonnaise
- 50 gms cream or grated cheese
- parmesan cheese
- Bread crumbs
Preparation
- Poach fish using 2 cups water, vinegar and 1 tsp salt. Remove fish and keep liquid.
- In a saucepan, melt butter, add 1 tsp salt, the flour and cayenne pepper. Mix
- Gradually add milk and the fish liquid while stirring and cook until thick.
- Remove from heat and add gherkins, lemon juice, mayonnaise and cream or grated cheese.
- Place fish in greased oven proof dish and pour over the sauce.
- Cover with dry breadcrumbs and sprinkle with grated parmesan cheese.
- Bake at 180 C for 10 mins or until browned.
