Crumbed Topped Grilled Fish

Ingredients

  • 500 gms fish fillets
  • 3/4 cup fresh bread crumbs
  • 3 tblsp parsley , chopped
  • 1-2 tsp grated lemon rind
  • 75 gms butter melted
  • salt and freshly ground pepper

Preparation

  1. Mix breadcrumbs, parsley, lemon rind, seasoning and 3/4 of melted butter.
  2. Place aluminium foil over grill rack and place fish fillets on the foil. Brush fish with some of the remaining butter and grill for about 3 minutes.
  3. Carefully turn fillets over and butter other side. Spread breadcrumb mixture over the fillets and grill until fish is cooked and the crumbs brown.
