Char-grilled Mussel Kebabs

Ingredients

  • 500 gms mussel meat
  • 50 gms snow peas, trimmed
  • 1 red pepper,de seeded and cut into thick strips
  • 4 tbsp olive oil
  • 2 tbsp lemon or lime juice
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh dill, chopped
  • salt and pepper to taste

Preparation

  1. Thread mussels, snow peas an pepper strips onto metal or wooden skewers.
  2. Mix together remaining ingredients and pour over kebabs.
  3. Leave to marinate for 1-2 hours
  4. Grill over hot charcoal until the vegetables are tender, brushing with remaining marinade.
  5. Serve with salad and hot garlic bread.
