Calamari with Rice

Ingredients

  • 600 gms calamari
  • 1 cup rice
  • 3 tblsp oil
  • 1 small onion, finely chopped
  • 1/2 cup dry white wine
  • 2 tblsp tomato paste
  • 1 tblsp parsley, chopped
  • salt and pepper

Preparation

  1. Clean any film from calamari and cut into rings.
  2. Cook the cup of rice.
  3. Fry onion in oil till soft and clear. Add calamari and cook briefly, until flesh turns white. Drain off any excess oil.
  4. Add wine, tomato paste, Parsley and season to taste.
  5. Simmer for a few more minutes over a low heat. Stir in the rice and reheat. Garnish with lemon or tomatoes.
