Calamari with Cucumber Sauce

Ingredients
- 800 gms Calamari
- 1/2 cup red wine
- 1 tablesp lemon juice
- 1/4 cup oil
- 1/4 cup fench dressing
- 1/2 tsp dried basil
- 1 small cucumber
- 150 gms sour cream
- 2 tsp lemon juice
- 150 mls cream
- 2 tsp fresh dill, chopped
- 1 tbsp chives, chopped
Preparation
- Clean any film from calamari. Cut into rings.
- Mix wine, 1 tbsp. lemon juice, oil, dressing and add calamari. Refrigerate for 2 hours.
- Bbq or fry in hot oiled pan for about 30 sec.
- Sauce-
- Peel and seed cucumber, then sprinkle with salt. Allow to stand in a strainer for 15 minutes. Rinse and pat dry.
- Place cucumber. sour cream and 2 tsp lemon juice in food processor and blend.
- Whip cream until soft peaks form and fold in cucumber puree, dill and chives.
- Serve with the calamari.
